Keskul is a kind of milk pudding in Turkish cuisine. Desserts are important for most people after meal and people tend to choose desserts made of milk since they are low in calorie.

Ingredients

  • 7.5 cups milk
  • 1.5 cups sugar
  • 3 tablespoons rice flour
  • 2 tablespoons starch
  • A cup of powdered almond
  • A cup of coconut
  • An egg yolk
  • A bunch of powdered pistachio (optional)

Directions

Put the milk into a large pot. Add sugar, rice flour, starch and start whisking. After a while add egg yolk, 2 tablespoons coconut and 2 tablespoons powdered almond and start cooking and don’t stop whisking. Important part is whisking because if you don’t whisk good enough, it will be lumpy and the mixture will not be homogeneous. After boiling and stirring, it will come to its proper consistency. After that point, you can put it into bowls and leave them to cool. After cooling you may garnish keskul with powdered almond, coconut and powdered pistachio.
