Cauliflower Moussaka

When it comes to cauliflower, my favorite is fried cauliflower with yogurt, garlic and sauce but as a website that supports healthier life, we must suggest cooking moussaka over fried cauliflower since moussaka is healthier; many active substances which are good for health pass to water after you boil the herbs and vegetables. But be careful about overcooking since it may neutralize this effect.

Ingredients

  • 1 cauliflower
  • 2 carrots
  • 2 medium-sized onions
  • 1 tablespoon tomato paste
  • 1 teaspoon chili flake (or powder)
  • 1 tablespoon butter
  • 1/3 cup oil
  • A bunch of dills

Directions

Slice the cauliflower into small pieces using a knife.

Add butter and oil into a pot and while butter is melting, chop up onions and add into the pot. Chop up carrots and add to the pot when onions start to change their color to brown. I don’t recommend to caramelize onions completely.

Cook them together for a while and add tomato paste and continue cooking until tomato paste loses its raw smell.

Finally, add cauliflower pieces into the pot and cook them together for nearly 3 minutes. Add 3 cups water but I must point out that water amount can change since your pot may have different form and size. So you may adjust the true amount by adding enough water to cover cauliflower pieces, neither more nor less.

Cover the pot and turn the heat to low. Cook them together until cauliflower pieces gets soft.

Chop up dill and use it to garnish while serving.
