Vegetable Tart

  • 2 cups wheat flour
  • 10 tablespoons butter
  • 1 egg yolk
  • 1/4 cup cold water
  • 1 teaspoon baking powder
  • 1 teaspoon salt


  • 3 eggs
  • 1 cup milk
  • 1/2 cup grated kashar or cheddar cheese
  • 1/2 teaspoon salt

Vegetable Base

  • 1 eggplant
  • 1 zucchini
  • 1 onion
  • 1 carrot
  • 2 cloves of garlic, crushed
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt


Cut eggplant, zucchini, onion and carrot into cubes. Warm olive oil in a pan and then add vegetables and crushed garlic, mix them completely as saute.

Put egg yolk in a pot and then add cold water, beat them with fork. Then add butter, flour, baking powder, salt and continue kneading. If dough is too sticky, you may sprinkle more flour. After kneading, wait for 10 minutes.

Whisk 3 eggs, cheese and salt completely.

Place the dough into large tart tin, but you may also use tiny tins.

Put the vegetable mixture onto dough. After spreading it equally, put egg-cheese mixture on top.

Bake in preheated oven at 180 degree C (356 degree F) until its top gets brown.
