- 10 ounce root of spinach, rinsed and stemmed
- 2 onions
- 2 cloves garlic
- 5 tomatoes
- 1/2 cup olive oil
- 1/2 cup wheat berries
- 1 cup hot water
- 1 sugar cube
- 1 teaspoon lemon juice
- 1 teaspoon salt
Soak the wheat berries overnight and boil them over low heat.
Cut the leaves of spinach, you can use them for other recipes.
Cut the onions into small cubes and crush the cloves of garlic. Heat the olive oil in a saucepan then add and cook garlic and onion until wilted.
Add tomatoes in the saucepan and continue cooking for about 3 minutes and then add the stem of spinach. Add lemon juice, sugar cube and salt. Cook them and stir for a few more minutes.
Add wheat berries and hot water in the saucepan and carry on cooking until stems get soft. If you close the lid, it will cook more quickly. Once stems get soft, our meal is ready.
